Black fungus is mostly used for its texture. It is a dark grayish-brown fungus that has a d texture, but when soaked in water for at lease 45min turns into a jelly-like brown substance that is a component in some stir-fried dishes. Also great in salads. Simply soak in warm water for 45min, trim, slice and add to your favorite salads for added texture and color. Dark brown in color with a large open white veil on the underside between the cap and the stem. This mushroom has a full-bodies, meaty flavor with a sponge-like texture when cooked. They need to be soaked before using ( warm water, 45min). These are fully ripened, red spur chilies that have been dried in the sun. They are prepared for cooking by removing the , soaking in water and then pounding in a mortar. (Thai-Choice chili paste is also available in glass jars).   • 3. Add baby corn, black fungus, ginger and capsicum. Continue to stir-fry. .
  • 4. Add Thai-Choice Easy wok stir-fry sauce and continue to stir-fry for about 2-3 minutes, add spring onion near the end. .
